Brief description of study

Monell Chemical Senses Center, in collaboration with Penn Medicine, is looking for participants for an in-person research study examining how hunger influences taste sensitivity to sugar. You will be compensated for up to $35 per completed session. 

Detailed description of study

We are looking for volunteers to participate in a research study designed to understand how humans taste carbohydrates and if taste sensitivity changes when you are hungry. The study will take place in-person at Monell Chemical Senses Center, 3500 Market Street, Philadelphia, PA 19104. 

This is a one-session study lasting 2.5 - 3 hours with an one-hour break within. During the session, you will perform taste tests. You will be asked to eat a meal provided by researchers, have your blood glucose measured with a glucometer, and have body measurements taken. You will be asked to fast for 8 hours before the session and must feel hungry when you arrive.

At the beginning of the session, you will complete a brief screening taste test lasting approximately 5 minutes. If you meet the criteria based on this test, you will continue with the full study session. If not, you will be compensated $20 for your time and provided with a meal. 

To participate in the study, please fill out the following REDCap Screening Questionnaire. The questionnaire will take approximately 5-10 minutes. Filling out the questionnaire is voluntary and you may discontinue participation at any time. A researcher will reach out to you if you qualify.

Eligibility of study

You may be eligible for this study if you meet the following criteria:

  • Conditions: Healthy
  • Age: 18 years - 46 years
  • Gender: All

Inclusion

  • Generally Healthy
  • Fluent in English

Exclusion

  • smoking
  • taking prescription pain medication
  • history of taste, smell, or other oral disorders
  • history of middle ear surgery
  • current oral lesions, canker sores, or piercings
  • are diabetic or taking insulin
  • have any food allergy
  • have a chronic gastrointestinal condition
  • on a calorie-restrictive diet
